Hospitality Group Bart & Taylor is bringing New York City soul and a boundary-pushing cocktail list to Seven Dials. We partnered with beverage lead Angelos Bafas to engineer a custom workspace that easily handles a peak demand of over 100 drinks per hour, completely elevating the premium guest experience.

When hospitality leaders Andrew Taylor and Aiste Bart conceptualized Cato, they envisioned a venue fueled by New York City soul and British produce. Spread across three distinct spaces, the ambitious new build required a bar setup that could match their highly creative cocktail list.

They partnered with Vitrum to ensure their cocktail bar, inspired by Cato Alexander, was fully equipped for an unparalleled guest experience. We designed and fabricated an island bar setup specifically built to handle intense peak demands of over 100 drinks per hour.

Cato is a very special project that has been in the making since I first met Andy and Aiste five years ago. Our aim is to bring memorable flavours and experiences to life using humble, local ingredients. By reviving old school, almost forgotten techniques, we aim to show how simplicity and creativity can transform the way people experience flavour through drinks.

Cato’s ingredient-led menu demands a flawless setup behind the counter. To serve over 50 guests efficiently , we engineered a compact 2-meter bar featuring two specialized workstations.

We integrated a mixed ice program and an espresso station straight into the layout. It’s a workspace built to balance strict ergonomics with the high-volume output required for complex cocktails.

Custom fabrication for peak performance

We brought Cato’s workspace to life using our Singapore Sling combined with a bespoke island bar configuration. Because speed of service and ergonomics were their primary objectives, we meticulously planned the layout to eliminate wasted movement and comfortably handle peak demands of over 100 drinks per hour.

From the initial bar station design through to custom stainless fabrication, supply, and ongoing aftercare, we delivered a comprehensive solution. By resolving the complex operational challenges behind the counter, we gave the team the reliable foundation they need to focus entirely on the premium guest experience and the art of bartending.
