Designing an ergonomic open kitchen for seasonal dining

Maksims Cekots approached Vitrum to help bring Kice Restaurant to life in Rīga, Latvia. With a focus on a calm but lively environment, the goal was to create a space that delivers a premium guest experience while maximizing ergonomics for the staff. We worked together to transform this new build into a fully functional 50-seat casual dining venue.

Equipping a dynamic space

Kice Restaurant operates from lunch through late-night service, requiring a highly adaptable setup. To handle a daily volume of up to 200 freshly cooked meals, the open kitchen needed to be as visually appealing as it is efficient.

Premium fabrication and supply

Working within a 60 kW electrical capacity, we supplied essential high-performance equipment. This included a combi oven, Josper grill, blast chiller, upright refrigeration, and undercounter warewashing systems. Our custom stainless fabrication  tied the workspace together, ensuring a seamless flow for the culinary team.

Crafting spaces for hospitality

By carefully integrating the custom bar station and restaurant kitchen, we delivered an environment where the staff can effortlessly execute their craft. The open kitchen design turns the fresh cook-serve production method into a captivating part of the premium guest experience.
